after scouring the cupboards and refrigerator i found other left overs: rolled oats, toasted pecans, lemons, eggs, bits and pieces of left over butter… so i made some cookies
they were delicious, slightly under baked with just the right amount of crunchiness on the edges. if you would like to make your own:
in a large mixing bowl, mix together 4oz soft butter, 1/4c+1T light brown sugar, 1/4c+1T sugar until light and creamy. add 1 egg, 1t vanilla extract and 1/4t lemon juice. mix well.
in another bowl combine 1c+2T all purpose flour, 3/4t baking soda, 3/4t salt and 1/4t cinnamon. slow add dry ingredients to above. mix until just combined. then add 1/2c rolled oats, 1c chocolate chips and 1/2c toasted pecans, chopped
roll into what ever size you like. just remember that baking temperature will vary, bigger cookie=longer cook time, smaller cookie=shorter cook time.
325*F for 8-12 minutes for “2 bite cookie” the size of a silver dollar
